PURE GRASS BEEF
We cross breed Angus, Galloway and Shorthorn cattle for rugged, cold hardy, easy fleshing, prime grading grass fed beef.
Our cattle graze extensively on open pastures. We feed only grass hay and minerals though the winter. Instead of concentrating on intensive grazing, we focus on breeding animals that are genetically adapted to perform well on a grass forage diet in a cold climate. Our animals overwinter outside with access to wooded areas for shelter. We let the environment sort the genetics and select for the most functional animals.
We farm at 1500 feet on the shale ridge between Seneca and Cayuga lakes in upstate New York. Our winters are cold, windy and wet. Spring can be especially cold, wet and muddy in our region. Our soil is acid and thin and the pasture is rough. We turned to the Scotch cattle of the past to find animals that would keep us in business.
